Mochi and its super-cool founder - #TRT

Not to brag, but I totally called this one five years ago. Then again, it's a surprise it didn't happen sooner. The cutest and most delicious form of ice cream is now totally trendy and accessible. Yes, we're talking about mochi ice cream.

In case you don't know, mochi ice cream is a perfect treat. And if you really don't know, just wander into your nearest Whole Foods. They've introduced mochi bars, where you can try flavors like matcha and mango. The ice cream is wrapped in mochi (pounded sticky rice), giving it a consistency which is quite honestly mindblowing. And I'm not exaggerating.

And, hi, okay, if that's not enough for you - get this. The inventor of mochi ice cream was the COOLEST, too. Her name was Frances Hashimoto and she was a businesswoman and community activist. In fact, she was one of Little Tokyo's most influential business leaders who fought to preserve the neighborhood's Japanese cultural traditions. Also, (no big deal) she took over her family business at age 27 and grew the business by four times. And then, yeah, she just invented the most glorious treat in the world. Sadly, she passed away in 2012, but Frances Hashimoto was a total badass. And don't you forget it.
